Fullness of tastes… The scents of maritime pines, the singing crickets, the sea view, the marine brise, and… Arnaud Donckele’s cuisine, chef of the Résidence de la Pinède. Since he arrived in Saint-Tropez, in 2004, the young Norman proves that age and value are two distinct parameters.
He can delight you with nearly nothing…A nice, fresh and crunchy salad with a glass of rosé de Provence. A grilled sea bass, with a dash of olive oil and sea salt, served with a glass of Cassis, this Provence white wine of subtle iodine fragrances.
Why do simple when you know how do it perfectly complicated? With his strong technical skills and his productive imagination, the chef dares unusual alliances, mixing green peas with caviar, calissons and pigeons, lobsters, basil and Carpentras black truffles. It’s complex and subtle. It’s daring. It’s always a success.
We can say that our chef has dedication. He possesses the expertise to delight the most blasé gourmet. Trained by Michel Guerard and Alain Ducasse, and formerly assistant to Jean-Louis Nomicos at the Lasserre restaurant in Paris, he came to us with a solid experience, the taste for rigour and a huge passion for the products.
His cuisine is a trip. One day, it will send you straight on the other end of the planet to discover the intense flavor of a combawa, the mauricien cousin of lime. Another day, you will taste the flavors of the other side of the Mediterranean to initiate you to the “hazelnut” taste of the argan oil and the delicate fragrance of the Atlas herbs. Delights awarded for a second star to the Michelin Guide Millésime 2010!
